Fish is classified as functional foods, which refers to products providing beneficial effects on our health and well-being.
Fish is a good source of high quality protein which contains essential amino acids such as tryptophan, lysine, methionine, cysteine, threonine. The protein is digested in over 90 per cent.
There is a huge quantity of micro- and macroelements (calcium, phosphorus, fluoride, iodine, selenium) and fat-soluable vitamins. Moreover, fish meat includes unsaturated fatty acids – these from omega-3 group such as: DHA and EPA. According to results of research, consumption of fish, and in the same time fatty acids, can significantly: lower the level of triglycerides in blood, reduce the risk of heart attack and cardiovascular disease, slower atherosclerosis, improve functions of nervous system (mitigate depression and stress, boost memory), decrease the risk of inflammation (stimulate our immune system).

Herring is Baltic, low calorie (160 kcal per 100 g) fish containing medium level of omega-3 fatty acids. Herrings are a good source of protein (17 %) digested in 98 %. The fish provides high dose of vitamin E, which is considered to rejuvenate skin and vitamin D, which is vital for our brain. Moreover, herrings contain iron, zinc, phosphorus and iodine – beneficial for people suffering from cardiovascular diseases and anaemia. Herrings can be prepared in many ways – frying, roasting, smoking, grilling, pickling. They suit as a main dish, as a starter or an ingredient of salads.
Zander is found mainly in rivers and lakes of eastern and central Europe. As a freshwater species it doesn’t possess health-improving properties typical for sea fish. However, zander is considered one of the most delicious fish, it is especially esteemed for light, firm meat with few bones. It can be served boiled, fried or stuffed, it suits for sushi perfectly. Its delicate flavour composes well with intensive additives.
Gilt-head bream is found in Mediterranean Sea and the eastern coastal regions of the North Atlantic Ocean. It has low-fat (100 kcal / 100 g), firm but juicy meat with few bones. The fish can be for instance fried, grilled or baked whole in the salt. In Mediterranean countries gilt-head breads are commonly dried in the sun.
