Admirers of fish do not have to be encouraged to frequent consumption of fish, but if you are not one of them, we recommend you to taste exquisite fish dishes of our Chef, which are prepared with particular attention to good quality ingredients. This month Verres en Vers is especially proposing: Halibut fillet with millet, green peas, shallots and hollandaise sauce.
Halibut is one of the most favourite fish, it is appreciated for exceptional taste, presence of very few bones and nutrient values. Halibut is a flatfish of impressive size as it can grow even to 3 or 4 meters and weigh 300 kilograms. It lives in very cold depths of Atlantic Ocean - in the North Sea, the White Sea, along Canada and Greenland.
Meat of halibut is recommended in many diets, because it contains a lot of high quality protein and, due to very little fat content, it is low-calorie (91 kcal/100 g), similarly to cod (82 kcal/100 g). Halibut has also vitamins B6, B12 and PP and mineral elements, such as selenium, potassium, magnesium and phosphorus. Although it is low-fat, it is a great source of omega-3 and omega-6 acids, which help to lower the risk of heart and cardiovascular diseases, improve memory and thinking
processes, moreover, they reduce rheumatic conditions and decrease level of cholesterol.
Halibut has characteristic flavour, which does not require any special additives or spices and it also has very few fish bones, what makes it surprisingly easy to prepare. It can be successfully fried, boiled, roasted and grilled. Smoked halibut is very popular, as well. It goes great with bread and salads.
